It's Monday night which means salmon. I grilled a large piece of fillet and added some coconut cream to which I added tomatoes, curry powder, parsley and spring onion. I also diced some chilli. This was all plated on a bed of wombok which added a nice crunch to the meal.

Roast chicken thigh on a self-created sauce. Ready to watch #MKR    #Canberra   #FoodPhotography   #LowCarb    I oven baked celeriac and cauliflower while boiling cream to reduce it. I added the roasted vegetables to the cream and added butter. I also added some spinach. I blended with a stick blender and added some cream cheese to thicken the sauce a little more. I then put the chicken on top. It was delicious #yummy

Tonight I made a low carbohydrate meat loaf with regular mince, ground Queensland nuts and cashews with spring onions, radish, parsley, tomato, Brie, Blue cheese, Coon cheese and lots of pepper. The cauliflower pumpkin mash was made with cream cheese and butter.
