It’s been a busy working week but it’s also been a good cooking week. It’s not as cold as most May days are in Canberra but even so I’ve had the heater on in the morning and evening.

You can see it hasn’t been too cold, well 2.4 °C isn’t cold for Canberra at the start of the working day.

Good morning Office #coffee Not too cold this morning #surprised

Cold enough for hot chocolate. This is the mug Miss16 got me when she was Miss14 and visited the US while on a gymnastics tour.

Tuesday morning I dipped into the “Shelf of Shame” and plucked out a tin of corned beef. Bron calls it the “Shelf of Shame” because it contains “Gary food”. It has Polish sauerkraut, a big bottle of anchovies, tins of SPAM and tins of corned beef. Even though I made hashed corned beef from scratch recently I’m not ashamed to buy, cook and eat tinned corned beef.

With a small amount of corned beef which I fried up I made a corned beef omelet

On Wednesday morning I perfected the corned beef omelet. This was delicious. Two types of cheese, viz., Gruyere and Coon plus lots of parsley and the fried up corned beef.

Bron came over tonight and brought some lamb cutlets with her as well as some asparagus

I focused again on Bron’s homemade beetroot relish rather than the nicely cooked lamb cutlets

  2. You definitely eat TOO well! haha. And salmon? I reckon I could eat a nicely cooked piece of salmon every day and not get sick of it!

      • Haha. Well, I’ve just started Lite n Easy. It’s my second day today. The day yesterday started out well, but then by the time I got home from work I was rather hungry so cooked up some spinach and drank lots of water. I finally held off eating dinner until about six pm. Then after that I was hungry again, but strangely, my hunger went away as the evening progressed and I resisted the temptation to eat anything else! My husband started last week on it and has already lost two kilos. It seems a bit expensive, but in the end, one does not have to do any grocery shopping except for supplemental veggies/salad if desired, and low fat milk, which is part of the diet but not included in the delivery for some reason.

How is your diet coming along? We also bought new scales from Harris Scarfe a couple of weeks back – the weight watchers ones were reduced from two hundered dollars down to forty, which was a huge discount and bargain, and THEY WORK WELL! 😀

  3. Your roasted pumpkin and sweet potatoes look delicious! I love those flavors. Your avocado on toast also looks good. It’s inspiring me to make a sandwich with avocado 😀

  4. Enjoyed reading about your week, some interesting food choices, Bron seems to be a good sort, very lucky to have her.

Please tell me what you think
