It may look disgusting but gee it tasted good. Pork belly slow roasted and cooled. Cut into bite sized chunks. Sautéed onions and two tomatoes. Add pork and potatoes. Season to taste. I added lots of chilli flakes and pepper plus some curry powder. I then added a handful of rice and put the saucepan into a slow oven for 90 minutes.
The pork was tender and the taste divine.
